Tuna Casserole

Ingredients

  • 1 can (10 ½ oz) low-sodium cream of mushroom soup

  • ½ cup low-fat or fat-free milk

  • 2 tablespoons pimientos (optional)

  • 1 cup frozen peas and carrots mix

  • 2 cans (about 5 oz each) tuna packed in water, drained

  • 2 cups medium egg noodles, cooked and drained

  • ¾ teaspoon salt-free Creole seasoning 

  • 2 tablespoons plain, dry bread crumbs

  • 1 tablespoon melted margarine or liquid margarine

Directions

  • Heat oven to 400 degrees F.
  • In a 1 ½ quart casserole dish, stir together the soup, milk, pimientos, peas and carrots, tuna and noodles.
  • Season the mixture with salt-free Creole seasoning.
  • Bake the tuna mixture for 20 minutes or until hot.
  • In a small bowl, stir together the bread crumbs and melted margarine.
  • After 20 minutes or when the casserole is hot, take the dish out of the oven, stir the mixture, and top with the breadcrumb mixture.
  • Bake for another 5 minutes or until the breadcrumbs are golden brown.
