Kid-Approved Fish Sticks with Tartar Sauce

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 lb. ground turkey

  • 1 small onion, diced

  • 5 cloves garlic, chopped

  • ¼ cup dried Italian seasoning

  • 16 ounces lasagna noodles, may use whole-wheat

  • 6-ounce bag fresh spinach

  • 2 cups reduced-fat mozzarella cheese, shredded

  • 1 cup reduced-fat cheddar cheese, shredded

  • 24-ounce jar spaghetti sauce • Salt and pepper to taste

Directions

  • Preheat oven to 375°.
  • Cook lasagna noodles according to package, then set aside.
  • In a deep skillet add the chopped garlic, diced onion, and ground turkey, then cook until well done.
  • Add Italian seasoning, salt, pepper, and spaghetti sauce, then cover and let simmer on medium-low heat for 10 minutes.
  • Once sauce is complete, in a 13×9 rectangle pan, start layering your ingredients as follows, meat sauce, cheese, spinach, and pasta. Continue to layer until desired thickness.
  • On the final layer, have pasta on top, then cover with remaining cheese.
  • Bake in the oven at 375° for 30 minutes. Bake in the oven at 375° for 30 minutes.
