One Pot Beefy Rice Casserole
Ingredients
6 cups shredded cabbage or 16-ounces coleslaw mix
1 cup uncooked brown rice
1 pound extra-lean ground beef
1 10-ounce can no-salt-added diced tomatoes, drained
1 4-4.5 ounce can diced green chilies, drained
1 14.5-ounce can fat-free, low-sodium beef broth
1 15.5-ounce can no-salt-added black-eyed peas (alternatively, you can use any no-salt-added canned beans rinsed and drained)
Directions
- Preheat the over to 350oF
- In a large ovenproof pot, layer as follows: Cabbage, Rice, Beef, Tomatoes, and Green Chilies.
- Pour the beef broth over all.
- Cook covered, for 1 hour 40 minutes (f your ovenproof pot doesn’t have a lid, cover it with aluminum foil).
- Stir after 40 minutes.
- Continue cooking, covered, until the rice is tender and the liquid is absorbed.
- Remove from the over. Stir in the black-eyed peas and pepper.
